LEMON TAHINI DRESSING

A classic dressing and easy dressing that tastes good on pretty much everything. I remember Tahini was one of those exotic ingredients that vegetarians in the 80’s would put all over there macrobiotic style meals. Today it continues to be a mainstay in easy to make delicious dressings. Sauces and dressings are an important element in eating well, simply, and deliciously so don’t underestimate a good sauce. If you are eating a simple diet you may find that those steamed vegetables or salads become nothing less than heavenly with the delight of the right dressing.


Ingredients

½ C Tahini

½ C filtered water

2 T lemon juice, the juice of one lemon

1 clove of garlic

1 tspn salt

2 T minced parsley


Instructions

Combine all ingredients in a blender and blend on high for 30 seconds OR

Do it the old fashion way and combine and whisk all the ingredients.

Store in glass jar.
